You will need:
-Okra
-Dried Cod (any dry fish would work)
-Your choice of meat (i used goat)
-Red oil
-Cray fish
-Onions and tomatoes (a very small quantity)
-Salt
-black pepper
-Yellow H peppers
Wash and prepare your ingredients, i do that all the time ( fix what needs to be fixed)
Boil your meat and set it aside with the stock (For African soups, my stock includes garlic, ginger, salt and Maggi )
Chop your onions and fry in red oil, not so much oil; very little(Or according to your preference)
Blend 1/4 of your okra with ground crayfish, chop the other 3/4(not blend)
In the onions and oil, pour in your stock and meat. (if by any chance your meat was overcooked prior to this, put it in last; so put in just your stock)
At this point taste your seasoning. One thing about African soups is the flavoring comes naturally from the dry ingredients like the fish. Check for Maggi and salt and put in pepper now if you'd like. ( It should be a little more salty than usual just cuz the excess salt accommodates the okra when you put it in. To be safe you can just add as you go :) )
Next add the okra which was blended with cray fish into the pot, and stir
Stir that in properly, and add the next batch of chopped okra into the pot
Stir your soup and let it sit half covered under low heat for a while, drop in a couple of yellow pepper fruits and black pepper. Eventually u'll see the oil at the top and you'll know its done!... My mom likes adding crayfish at the end for the fresh flavor.
