Roasted Tilapia RECIPE:.

This recipe is basically for the Fish.
-The plantains are just boiled with a a little salt and cut in half.
-The salad was store bought as well.


You will need
-Tilapia
-Ginger & Garlic
-Maggi
-Salt
-2 Tomatoes (2 tablespoons of crushed tomatoes)
-Njangsang (about 12)
-1 Large onion
-Fresh pepper
-Dry pepper
-Olive oil

*Wash you fish, wound it and salt it, with a lot of salt
*Cover it or wrap it in plastic wrap and let it sit over night
*The next morning, wash of all the salt and pat it dry
*Blend all your ingredients without the pepper(this time put as much salt and maggi as you would like in your fish)
*Rub the fish with olive oil then rub it with all your spices
*Place it in a baking tray and cover with aluminium foil for about 15-20mins
 Fish is very delicate, so you need to check it all the time, also if your oven usually cooks food at the bottom faster, you might want to turn the fish in between your 15-20.
* When the fish is cooked, take off the aluminium foil, put on some more of your spice mixture and put it back in the oven. This time don't cover it and set your oven to Broil.. actually roasting. stay close to the oven and let it brown, flip the side and do the same.

Sauce
Now take the rest of your mixture, add as much pepper as you would like and fry in a frying pan.
(if you need more pepper sauce than you have, add a little of everything)
