Eggplant Sauce in Dry fish

Eggplant sauce xoxo RECIPE: 
You will need:
(Serves,3 people- quick super)

-1 huge Eggplant
-1/3 big tin of tomatoes
-half of an onion
-1 Maggi
-Salt
-Ginger & Garlic
-pepper
-2 plantains

Blend all your ingredients together into a paste.
Fry it in oil on medium heat for about 1 hour and more. 
Do not let it burn and do do not let it dry. This is to cook to a nice thick sauce. 
Half way through - add in your dry fish.

To roast the plantains in the oven, set it to broil. and flip for bother sides. Mine burnt a little.
